Pumpkin Waffles Recipe


Pumpkin Waffles

This recipe makes a great breakfast waffle. Warm Pumpkin Waffles with ice cream or whipped cream are also a wonderful fall dessert.

  • 3 cups flour
  • 5 tsp. baking powder
  • 1/2 tsp.baking soda
  • 1/2 tsp.cinnamon
  • 1/2 tsp.nutmeg
  • 1/4 tsp. salt
  • 3 eggs, lightly beaten
  • 1/3 cup brown sugar
  • 2 cups homemade pumpkin puree or 1 can solid pack pure pumpkin
  • 2-1/2 cups milk
  • 3/4 cup butter, melted

Preparation -
In a large bowl, whisk together the the flour, baking powder, baking soda, cinnamon, nutmeg and salt; set aside. Mix the beaten eggs and brown sugar together in a separate bowl. Add the pumpkin and milk and mix well. Add the melted butter and mix again. Add the pumpkin mixture to the flour mixture. Stir to mix the ingredients together, just until the dry ingredients are moistened. Do not beat. Following your waffle iron's instruction manual, pour the correct amount of batter onto the preheated waffle iron and bake until golden brown.
