With so many ways to match food with beer, you can create your own "gourmet style" without too much effort. Once you know a bit about the different styles of beer and their inherent characteristics, doing great pairings will come with ease. It's a bit like pulling the colors together in your home decor, or building your garden to show off colors during different seasons. You can stay with classics, consider seasonality, find harmonies, use contrast and complementary design, or match delicate with delicate or bold with bold. Create the right mood by considering the purpose.

Sweet and rich foods can be balanced by beers of hoppy bitter profiles, roasted malt character, effervescent carbonation, and higher ABV. Spicy, hot and acidic foods blend better with sweeter, maltier brews. Spiciness gains more punch when paired with hop bitterness.

Beer should be paired with each course in your dinner menu. The purpose of an aperitif is to whet the appetite, so the beer should be light and crisp to match a light appetizer. You have great latitude with entrees. You may serve lighter grilled fish with Pilsener, roasted poultry with European Style Dunkel, or grilled steak with Robust Porter. Desserts work well with beer, matching the sweet flavors of buttery pound cake, cheesecake, or carrot cake with fruity lambics and IPA's. Decadent chocolate desserts create music with Dark Belgian beers, Imperial Stout, or Barley Wine. Desserts with fruit call for a Belgian Tripel or Witbier.

A fifteen year-old boy came home with a new Chevrolet Avalanche and his parents began to yell and scream, "Where did you get that truck???!!!" He calmly told them, "I bought it today."

"With what money?" demanded his parents They knew what a Chevrolet Avalanche cost.

"Well," said the boy, "this one cost me fifteen dollars." So the parents began to yell even louder. "Who would sell a truck like that for fifteen dollars?" they said.

"It was the lady up the street," said the boy. "I don't know her name - they just moved in. She saw me ride past on my bike and asked me if I wanted to buy a Chevrolet Avalanche for fifteen dollars."

"Oh my Goodness!," moaned the mother, "She must be a child abuser. Who knows what she will do next? John, you go right up there and see what's going on."

So the boy's father walked up the street to the house where the lady lived and found her out in the yard calmly planting petunias. He introduced himself as the father of the boy to whom she had sold a new Chevrolet Avalanche for fifteen dollars and demanded to know why she did it.

"Well," she said, "This morning I got a phone call from my husband. I thought he was on a coffee break, but learned from a friend he had run off to Hawaii with his mistress and really doesn't intend to come back. He claimed he was stranded and asked me to sell his new Chevrolet Avalanche and send him the money. So I did."

Answer: The largest handmade wooden brewing vessels in America are made of exotic Paraguayan Palo Santo (Holy Tree) wood, and are currently at Dogfish Head Craft Brewery of Milton, Delaware, USA. The vessels are 10,000 gallons each and are being used to age yet another "extreme" DFH beer. Palo Santo Marron (Holy Tree Brown) comes into the spotlight with its February 2008 release. This unfiltered brown ale will have rich, roasted, caramel flavors with vanilla notes imparted from wood aging. Originally released as a once-off at the Rehoboth Beach Brewings & Eats in November 2006, Palo Santo Marron is back in full production due to popular demand. 12% ABV.

Style: American Pale Ale

What a refreshing, well-balanced drinker! The amber orange body glimmers with stately grace inside the pint glass, with a head of creamy, frothy white that leaves delicate lacing in patterns on the inside surfaces. Aromas are of sweet malt, florals, and citrusy orange and grapefruit rinds. Bready malt flavors of fresh steamy bread touch the tongue, balanced by the citrus, floral bitterness in the background. Flavors are so clean and fresh, I wish the ocean were made of this. Well done!
