Crustless Spinach & Cheddar Quiche

Serve this delicious crustless quiche with a tossed green salad for a healthy, quick and easy lunch or dinner!

Yield: 6 servings
Prep Time: 30 minutes
Cooking Time: 40-45 minutes

Ingredients:

1 cup onion; chopped
3 teaspoon olive oil
1 cup turkey; cooked, diced
2 cup cheddar cheese; shredded
1 bunch spinach leaf; chopped
5 each egg
1/8 teaspoon black pepper

Preheat oven to 350°F On the stovetop, saute the onions in the olive oil until clear. Add spinach and turkey and cook until all moisture is evaporated. Stir frequently. Set aside to cool for a few minutes. In a separate bowl, mix eggs and pepper, beat well. Add cheese and the spinach and turkey mixture. Beat well. Pour into greased 9 inch pie pan. Bake at 350°F for 40 - 45 minutes.
