Crustless Spinach & Cheddar Quiche


Serve this delicious crustless quiche with a tossed green salad for a healthy, quick and easy lunch or dinner!

Yield: 6 servings
Prep Time: 30 minutes
Cooking Time: 40-45 minutes

Ingredients:

1 cup onion; chopped
3 teaspoon olive oil
1 cup turkey; cooked, diced
2 cup cheddar cheese; shredded
1 bunch spinach leaf; chopped
5 each egg
1/8 teaspoon black pepper

Preheat oven to 350F On the stovetop, saute the onions in the olive oil until clear. Add spinach and turkey and cook until all moisture is evaporated. Stir frequently. Set aside to cool for a few minutes. In a separate bowl, mix eggs and pepper, beat well. Add cheese and the spinach and turkey mixture. Beat well. Pour into greased 9 inch pie pan. Bake at 350F for 40 - 45 minutes.
