Edamame are small soybeans that grow like peas in a pod. You do not eat the pod, just the inner beans. Edamame are really good for you - and they are easy to make into a dip just like guacamole! Making this edamame dip takes under five minutes, only needs a microwave, and is delightfully low carb and healthy.
1 cup edamame
5 Tbsp olive oil
1 1/2 tsp lime juice
1/4 tsp minced garlic
I start with a self-steaming edamame freezer bag. I cook it as instructed and then use a cup of it for this dip. If you have fresh edamame then certainly you can use that as well. I like the freezer option because it means you can always have some edamame ready in the freezer and make it whenever the mood hits you.
Put the cooked cup of edamame into a small blender along with the olive oil, lime juice, minced garlic, and then salt and pepper to taste.
Blend for thirty seconds or so. Depending on the moistness of your edamame you might want to add in some water to get it to the texture you want.
And voila - you're done!
This is the perfect way to fully use a freezer bag of edamame. I can use a third of the bag for the salad I'm having, or to mix into some tuna-fish, and then the remainder of the edamame go into a dip. That way I use the entire bag right away and then the dip can last a few days.
There are two servings of edamame dip here. Each serving gives you 10% of your iron and 10% of your vitamin C. There's almost 10% of your Vitamin A as well.
You get 9g of fiber, 120 calories, and 4g of carbs. There's a full 11g of protein - we all need to get ample protein in our diets.
Edamame is very good for you, and this dip is a perfect snack. It's a great way to enjoy celery sticks, carrot sticks, broccoli and cauliflower heads.
So keep some frozen edamame in the freezer, and whenever you get the mood for a healthy snack, you're only five minutes away from making it up fresh. All you need is a microwave, a little blender, and the desire for fresh, healthy food.
