Garlic is one of those super-foods that every top ten list includes. Spinach is right up there as well, a powerhouse of iron and other nutrients. Add them together with an under five minute recipe and you've got a sure fire winner!
10oz bag spinach
2 cloves garlic
2 tbsp butter
1 tsp lemon juice
Mince the garlic and slice the butter into pats. Put half of the spinach into a glass microwave-safe bowl and top it with the garlic and butter. Add in the lemon juice and pepper. Cover and microwave for 45 seconds to let that part settle down.
Stir it up a bit, then add in the rest of the spinach. Recover. Now microwave for another 2 minutes. The spinach will reduce in size down to about a plate-sized amount. Stir again and let it sit for a minute or so to release its steamy heat.
You can break this out into 3-4 servings as a side dish for a main course, or I like to eat this myself as a main dish. It's delicious and very good for you! You don't end up ingesting most of the butter, it ends up draining off the spinach onto the plate.
The 10oz of spinach has 9g of carbs - but 6g of those are fiber! So you get a delightful 6g of fiber from this and only 3g of net carbs. You get a whopping 1141% of your Vitamin A, 106% of your vitamin C, plus half of your potassium and a third of your iron and calcium.
The garlic is really too small to count - maybe an extra carb if that. So your total carb count is probably 4g at the most, and the amount of healthy nutrition you get is simply staggering.
While the volume of garlic is low, studies have shown that garlic can help to reduce your cholesterol. One study found that people eating garlic daily for 12 weeks had their cholesterol drop by 12% at the end! That's a percent every week. So there are all sorts of reasons to include garlic into your daily routine.
