Carb Options Skippy Creamy Peanut Spread
Regular peanut butter is FULL of sugar and is hardly a healthy food, despite its protein. While natural peanut butter is healthier, it separates and can be hard to spread. In comes the carb options jiffy creamy peanut butter!
I have to admit I'm not a huge fan of natural peanut butter as much as I try to eat it. The separation of oil and peanut makes a strange texture that I don't enjoy. It is really hard to spread, making it hard to use.
I was THRILLED then to try out the carb options skippy creanut peanut spread, at only 3g net carbs per serving. It actually has 5g total carbs, but 2g of those are fiber and are not counted. There is 150mg of sodium, which is fairly low. The peanuts nicely provide 7g of protein.
How about fat? Skippy has 17g of total fat per serving (2 Tbsp) and of that, 3.5g are saturated fat. 0g are trans fat, which is good. Still, all peanut butters are fatty, that is the way they are. Peanut oil is generally thought of as being very good for you, so this isn't a "bad fat" in the way that, say, those things that McDonalds french fries are cooked in are :)
Skippy's spread is sweetened with Splenda, instead of the pounds of sugar used in most peanut butters. I found this to be wonderful - the spread had a delicious flavor, exactly like normal Skippy. It is SO smooth and creamy, I haven't had any trouble at all spreading it on anything. Where you have to refrigerate natural peanut butter (which adds to its spreading difficulties) you don't have to refrigerate this spread, making it quite easy to work with.
I use this spread for peanut butter and jelly sandwiches (using low carb wheat bread and low carb jellies of course) and it is simply delicious. You could use this to make low carb peanut butter cookies, low carb peanut butter and celery snacks, and much more.
