Recipe for Tex-Mex Christmas Tea Bites

Ingredients:

1cup softened butter
¾ c powdered sugar
1tsp vanilla
2 c flour
¼ c cocoa powder
¼ tsp salt
1/8 tsp nutmeg
1c finely chopped pecans
36 chocolate kisses -unwrap them
1c powdered sugar
2Tbsp cocoa powder
1 tsp cinnamon

Directions:

1. Turn oven on to 350 degrees to preheat
2. Use a large bowl and combine the butter and powdered sugar and beat until fluffy
3. Add the vanilla and mix well
4. Stir in the dry ingredients: flour, cocoa powder salt and nutmeg – mix until a dough forms
5. Add the chopped pecans
6. Cover and chill several hours in the refrigerator

Later:

1. Form dough into 36 balls.
2. Wrap each dough ball around a chocolate kiss, making sure to completely cover the kiss
3. Place on a baking sheet and then bake for 11-14 minutes or until just set
4. While the cookies are baking- combine 1 cup powdered sugar, 2 Tablespoons of cocoa powder and the cinnamon in a shallow bowl and mix well
5. When the cookies are done take them off the baking sheet and drop into the powdered mixture and roll to coat
6. Set cookies on a wire rack to cool
7. When cool, roll them in the powdered mixture again

These cookies will look great on a gift plate of cookies.

Another favorite recipe of the area-

Tres Leches (Milk Cake)

Ingredients:

Cake:
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 cup unsalted butter
• 1 cup white sugar
• 5 eggs
• 1/2 teaspoon vanilla extract

Topping:
• 2 cups whole milk
• 1 (14 ounce) can sweetened condensed milk
• 1 (12 fluid ounce) can evaporated milk
• 1 1/2 cups heavy whipping cream
• 1 cup white sugar
• 1 teaspoon vanilla extract

Directions:

1. Preheat oven to 350 degrees
2. Grease and flour a 9x13 inch pan
3. Sift the flour and baking powder together and set that bowl aside
4. Cream the butter and the 1 cup of sugar together until it is fluffy
5. Add the eggs and ½ teaspoon of vanilla; beat well
6. Add the flour mixture to the butter mixture a little at a time (less than ¼ cup at a time)
7. Continue mixing until well blended
8. Pour the batter into the prepared pan
9. Bake for 30 minutes at 350 degrees
When you take the cake out of the oven:
• Pierce the cake several times with a fork- set aside to cool
• Combine the whole milk, condensed milk and evaporated milk together
• Pout over the top of the cooled cake
• Whip the whipping cream and the remaining 1 cup of sugar and the remaining 1 teaspoon of vanilla until it is thick
• Spread this over the top of the cake

Keep this cake in the fridge when not being served or eaten. It won’t last long, but is so yummy!
