Fun and Easy Super Bowl Recipes


Which ever team happens to be your favorite, whip these recipes up the day before Super Bowl and they’ll be ready to go pretty quickly from the fridge to table or fridge to oven leaving time to enjoy the game! Before we get started I do have to shout out my support like a good Patriots cheerleader would (man, that might be a fun job!) anyway, I am from New England originally, born and raised, so….Pat’s all the way! Geez, I call Brady "my boy" he's just that good along with a stellar line-up, a controversial coach who gets the job done and some great team play and spirit. Actually, even if I wasn’t a Pats fan, I think it would be sooo cool to see any team that came this far win it all, it’s just a cool thing.

Let’s start with some Seafood Kabobs. Using bamboo or steel skewers, alternate large shrimp, 1 small lime slice, fresh pineapple chunks, slices of sweet yellow pepper, baby scallops, 1 small lime slice again and 1 small lemon ring.

Soak kabobs in a marinade overnight made of 1 cup fresh squeezed orange juice, 1 lime juiced, 2 lemon wedges, 1/3 cup of teriyaki sauce, 1/8 teaspoon grated ginger and 1/3 cup of light brown sugar. Make sure kabobs are well covered and store in fridge. These are easy to put together and will cook for about ten minutes in a pre-heated 350 degree oven. There is lime juice in your marinade so the shrimp and scallops will actually partially cook while marinating but will be very tender when cooked (try not to over cook)

French Bread Subs. Start with roasted garlic, here’s a link to my recipe http://www.bellaonline.com/articles/art50157.asp Mix the roasted garlic with some heavy mayo and your favorite spicy or Dijon mustard, spread liberally over both insides of your French bread. Fold and layer your favorite meats in between layers of watercress, thinly sliced cucumbers and your favorite sprouts. If you like avocados mix some into your garlic paste and add thin slices to your sub along with some sweet thinly sliced purple onion. You can easily get 8-10 sub slices from one loaf of bread. Serve with your favorite chips and dips.

Super Onion Dip You know the scoop with Lipton Onion Soup mix which is great but try mixing a packet with 1 container of sour cream, 1/3 cup of plain yogurt, 2 tablespoons of heavy mayo and 6 slices of crumbled crisp bacon, serve with chips and crackers.
