Summer BBQ Recipe, Hawaiian Style

Summer BBQ Hawaiian Style

Brown sugar pork ribs with mango and pineapple salsa

Summer is officially here and it’s time for family and friends to get together and barbecue. Barbecue sauce is great but you don’t need to put it on everything that goes on the grill! These pork ribs are marinated the day before and are so juicy and tasty when grilled slowly.

Mix up some mango pina coladas (remember you can make all those yummy drinks non-alcoholic too for everyone in your group) Pair up your favorite side salads and you have a good for you, appetite pleasing meal without the red sauces dripping on your shirt! I do love bbq sauce though, so another time we’ll use it.

You will need some good meaty pork ribs and place them in a pan for marinating.
Mix together 1 ½ cup brown sugar, ¼ cup pineapple juice, 1/8 cup pina colada mix (I love the one in the can for recipes, the consistency and flavor works really well) 1/8 teaspoon ground ginger (you only want a touch of ginger for this recipe as the glaze should be sweeter) That’s it! It’s so simple!

Mix the glaze ingredients together and pour over ribs. Place in fridge overnight. Put ribs on a pre-heated grill over medium low heat and cook slowly. As you know, pork needs to thoroughly cooked but that doesn’t mean it has to be dry or burned. Continue adding glaze, basting ribs and turning every ten minutes.

For salsa, cut up 3 mangos into small chunks and add 1 can of chunk pineapple without the juice (use the juice for your glaze) finely chop one small bunch of green onion and 1 small bunch of fresh parsley. For this recipe with the pork, add 1/16th of a cup of your pina colada mix. Add the juice of ¼ fresh lemon. Toss ingredients together and chill overnight. Your fruit chunks should be quite small when you cut them. Serve to the side of your ribs and garnish with fresh mint leaves.

The taste of these flavors combined is really unique, a bit sweet but absolutely wonderful. Hope you have fun with this!
