Greetings to all near and far. Spring has finally come out from hiding from under all that snow and ice that Winter bombarded us with. The Daffodils around our area are bright and cheerful, greeting everyone with their beauty and a blessed welcome to Spring.

For those of you who observe Easter, I hope you all had a wonderful Easter Sunday with family and friends. Still got some of those boiled eggs left? Slice them, dice them, crumble them (after peeling them of course) and put them in potato salad, macaroni salad, egg salad sandwiches, green salad, or in the lunch boxes for the kids.

Speaking of potato salad, have you ever tried using sweet potatoes instead of russet? Although not a major staple of the Native American tribes, sweet potatoes were grown and eaten by indigenous peoples in North America. Here is a good taste treat for something different at the next potluck you attend:

Sweet Potato Salad

2 pounds sweet potatoes, peel and cube
2 Tbsp lemon juice
1 cup mayonnaise
2 Tbsp orange juice
1 Tbsp honey
1 tsp grated orange peel
1/2 tsp ground ginger
1/4 tsp salt
1/8 tsp nutmeg
1 cup celery, sliced
1/3 cup dates, chopped
1/2 cup pecans, chopped
1 can mandarin oranges, drained

Boil potatoes until tender. Drain and add lemon juice. Place rest of ingredients in a large bowl and blend. Add potatoes and gently toss till potatoes are coated with dressing. Chill. Relax and have a cup of tea or coffee.

Brother Coyote

A few weeks ago I was sitting out on my patio. It was quite late. I was gazing at the moon which looked so pretty. I have a curtain I pull close at night around my patio lattice work so no one can see me sitting there but I can see the sky over the railing. Suddenly, quite close to me, Brother Coyote voiced his opinion of the moon also. I jumped off my chair when Brother Coyote howled because I was so startled. The noise my chair made when it scraped on the cement floor startled Brother Coyote and he ran up the hill to cover. I just saw a blur of him for an instant when I stood up and looked out there. I came inside laughing to myself, but a little shaky. I wonder if Brother Coyote was also laughing after he calmed down?
