Having a summer get-together, picnic or family reunion? Here's a great low carb menu plan that will have the entire group eating healthy and having fun!
Smoked Salmon with White Sauce
This shows up at many get-togethers I go to. Put the white sauce in a bowl to one side, and each person can choose how much to put on their salmon snack.
Bowl of Berries
This is always a big hit with all ages. Eaters can choose which berries they like best, and it's a healthy treat full of antioxidants.
Dish of Olives
You can mix it up with a variety of olives, from big to small, black and green. Some people like one or two with their food, while others can eat handfuls of them plain!
Pepperoni and Cheese
Put out circles of pepperoni and slices of your favorite cheese styles. If you want to serve it "on" something, cut circles of cucumbers and have those ready too. Cukes and Cheese is one of my favorite snacks!
Chicken and Beef Kebobs
Get some skewers, and onto each put 1 or 2 1.5" cubes of chicken or beef, cubes of zucchini, yellow squash, and onion. Grill a few minutes on each side until done.
Homemade Ice Cream
Ice cream is always a treat at picnics, and if it's homemade, it's fresh and flavored with Splenda. Meaning it's perfectly low carb!
