Pasta Vegetable Soup Mix Recipe
  • 2 T. beef boullion (granules)
  • 2 T. dried minced onion
  • 1 T. dried celery
  • 1 T. dried parsley
  • 1 tsp. dried minced garlic
  • 1/2 tsp. black pepper
  • 1/4 tsp. dried basil
  • 1/4 tsp. dried thyme
  • 1-1/2 cups pasta - Use small shells or a seasonal pasta, shaped as autumn leaves, Christmas bells, etc.
  • 1 cup dried peas
  • 1 cup dried kidney beans
  • 1 cup dried Great Northern beans

These directions are for giving this soup mix as a gift in a Pasta Pot or Pasta Cooker, as shown below. The directions on the printable tag are for preparing this mix in that kind of pot. You could alternately give the mix in a basket or other type of gift package.

To assemble the Mix...

  • Combine the first 8 ingredients; place in a plastic bag. Seal tightly, then place a label marked "Seasonings" on the bag.
  • The dried peas and beans can be placed in individual bags...sealed and labeled with the name of the type of bean,
    Or, layer the beans in one bag, seal and label as "Bean Mix".
  • Place the pasta in a bag, seal tightly and label as "Pasta".
  • Directions for the recipe card...
    <Place the beans in the pasta pot. Rinse and drain several times, then add water to cover beans. The water level should be about 2" above the beans. Let soak for 8 hours. Drain water from the beans. Add the seasoning mix + 2 quarts water + 1 can stewed tomatoes(14-1/2 oz.) + 1 large carrot, peeled and very thinly sliced + 2 cups chopped or shredded cooked beef or 1/2 lb. lean ground beef, lightly browned and drained. Bring to a low boil, stirring often. Reduce heat, cover, and simmer for about 1 hour, stirring occasionally. Meanwhile, when the soup has been cooking for about 30 minutes... In a separate pot, bring 4 quarts of water to a boil; add the pasta and cook for 10 to 12 minutes. Drain pasta. Stir the pasta into the soup and simmer for 10 more minutes. Serve piping hot!
