Sweet Potatoes and Apples

Sweet Potatoes and Apples

  • 5 large sweet potatoes
  • 2 large tart apples, such as Granny Smith
  • 1/2 teaspoon salt
  • 3/4 cup packed brown sugar
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 cup butter
  • 1/2 cup apple cider or apple juice

Preparation -
Peel the sweet potatoes and cut into 1/2" - 3/4" thick slices. Place in a pot of water, bring to a boil and cook for about 15 minutes or just until barely tender. Peel, core and cut apples into ¼" slices. Preheat oven to 350ºF. Layer the potatoes and apples alternately in a buttered shallow baking dish. Combine the brown sugar with the cinnamon and nutmeg in a small bowl. Sprinkle mixture over the potatoes and apples. Pour apple cider or apple juice over top. Cover with aluminum foil and bake for 30 minutes. Remove the foil, stir, and bake uncovered for about 15 more minutes or until the sweet potatoes and apples are lightly browned and tender.
