As the new Japanese Food site editor, I'll be working hard to build up the site so please be patient with me as I add more content each week. Check out my first posted recipes on the site. Therefs Sweet Kabocha, an easy and delicious rendition of Japanese winter squash. If you're not familiar with kabocha, I highly suggest you give it a try! It is not only naturally sweet and substantial enough for a vegetarian meal, it is packed with beta carotene, iron, potassium and vitamin C.
And a decidedly Japanese way to use up leftover mashed potatoes and meat: Turkey Korokke (Croquette) is a delicious with its golden brown crunchy crust filled with fluffy potato and bits of savory meat. Let me know what you think of these recipes!
