  • 5 medium apples - sliced thin
  • 5 T. sugar
  • 2 tsp. cinnamon.
  • 3 cups flour
  • 5 tsp. baking powder
  • 2 cups sugar
  • 4 eggs, beaten
  • 1/4 cup vegetable oil
  • 1/4 cup orange juice
  • 2-1/2 tsp. vanilla
Preparation -
Mix the first three ingredients together; set aside. Generously grease and flour a large tube cake pan; set aside. In a large mixing bowl, mix the dry ingredients together. Make a well in the center; add the the beaten eggs, oil, orange juice, and vanilla. Beat well for 2 to 3 minutes. Layer the cake batter & apple mixture in the prepared tube cake pan, beginning & ending with with the batter. Bake in a preheated oven at 350º for 70 minutes. After removing it from oven, run a thin knife between the cake and the sides of the pan to release the cake from the pan. Cool the cake in the pan, upright, on a wire rack. When cool, turn the cake over onto a plate.
