Ham with Pineapple and Yams

Ham with Pineapple and Yams


  • 1 T. butter
  • 1 cup mashed, cooked, candied yams or sweet potatoes
  • 4 thin slices cooked ham
  • 4 slices canned pineapple

    topping

  • 1/4 cup chopped pecans
  • 1/3 cup brown sugar
  • 1/4 cup pineapple or orange juice

Preparation -
Butter the bottom of a 1 or 1/2 quart casserole dish. Add the mashed candied yams or sweet potatoes. Place the ham slices on top. Place a pineapple slice on top of each ham slice. Mix the pecans, brown sugar, and fruit juice together. Spoon the mixture on top of the other ingredients. Cover lightly with foil and bake in a preheated oven at 350º for 15 minutes. Uncover and bake for an additonal 5 to 7 minutes or until the topping is lightly browned.
