Tasty, Tangy Meat Balls

Tasty, Tangy Meat Balls

  • 1 pound lean ground beef
  • 1 packet onion soup mix
  • 1/4 cup cracker crumbs
  • 1 egg, lightly beaten
  • 1/4 cup water
  • 1/4 cup ketchup
  • 2 T. brown sugar
  • 1 T. vinegar

Preparation -
In a large bowl, mix the ground beef, about half of the onion soup mix, cracker crubs and egg together. Shape the mixture into about about 30 - 1" round meatballs. Arrange the meatballs in a single layer in the bottom of a shallow microwave-safe baking dish. Combine the remaining onion soup mix, water, ketchup, brown sugar and vinegar; Mix well. Pour over the meatballs; cover with waxed paper and microwave on full power for about 8 minutes, re-arranging meatballs halfway through the cooking time. Cover and let stand for 3 to 4 minutes before serving.
