Microwave Brownies

Microwave Brownies

  • 1/2 cup butter or margarine
  • 2 squares (1 oz. each) unsweetened baking chocolate
  • 2 eggs
  • 3/4 cup sugar
  • 1 tsp. vanilla
  • 1/2 cup flour
  • 1 tsp. baking powder
  • 1/4 sp. salt
  • 1 cup chopped pecans or walnuts (optional)

Preparation -
Spray a square 8" or 9" microwave safe baking dish with non-stick cooking spray; set aside. Place the butter or margerine and the chocolate squares in a 2 cup glass measuring cup. Microwave on full power for 1 to 2 minutes or until melted. (Stop to stir after one minute, then at 30 second intervals. The chocolate squares may not look like they're melted until stirred.) In a mixing bowl, beat the eggs lightly. Add the sugar and vanilla and mix well. Mix the flour, baking powder, and salt together. Add the flour mixture to the egg mixture. Stir until the dry ingredients are moistened. Stir in the nuts. (optional) Pour the batter into the prepared baking dish. Microwave on full power for 6 minutes. (The brownies will look moist on top but will dry as they cool.) Cool completely before cutting into squares. Frost with Best Ever Chocolate Frosting, if desired.
