Chicken or Turkey Croquettes

Chicken or Turkey Croquettes

  • 3 cups finely cut cooked chicken or turkey
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 2 T. butter
  • 1/3 cup cornstarch
  • 1 cup milk
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 T. chopped parsley
  • 1 egg, beaten
  • 1/4 cup milk
  • 1 cup breadcrumbs
  • Oil for frying
Preparation -
Mix the chicken or turkey, onion, and celery together; set aside. Make a white sauce... Melt the butter in a saucepan over medium heat. Whisk in the flour. Add the milk gradually, while cooking and stirring until the mixture thickens. Simmer for about 2 minutes. Stir in the salt and pepper, remove from heat and let cool. Stir in the chicken or turkey mixture and the parsley. Refrigerate for about one hour. Shape the mixture into patties or cone shaped croquettes. Whisk the beaten egg and milk together. Dip each croquette in the egg/milk mixture, then in the bread crumbs. Heat oil in a large skillet over medium high heat. Fry until golden brown on all sides.
