Bacon-Wrapped Grilled Shrimp

Bacon-Wrapped Grilled Shrimp

  • 1 1/2 lb. jumbo shrimp - shelled & deveined
  • 1 medium onion - finely chopped
  • 1 cup olive oil
  • 1 tsp. sugar
  • 1/2 tsp cayenne pepper
  • 1/2 tsp. salt
  • 1/2 tsp. oregano
  • 1 tsp. garlic powder
  • 3/4 lb. bacon Preparation -
    In a small mixing bowl, combine all ingredients except shrimp and bacon. Place shrimp in a plastic bag, set inside a deep bowl. Pour half of the marinade over shrimp. Close bag; place in refrigerator and marinate for 3 hours, turning bag occasionally. cur bacon slice in half. Partially cook bacon; drain on paper towels. Drain shrimp; discard marinade. Wrap a piece of bacon around each shrimp and secure with a large toothpick. Place bacon-wrapped shrimp in a wire grill basket or on a 9" x 12" piece of heavy duty aliminum foil. Use remaining half of marinade to baste shrimp. Grill over medium hot coals for about 6 minutes. Baste and turn shrimp; grill 6 more minutes or until until bacon and shrimp are fully cooked.
