White Cake

White Cake

This cake is especially good with vanilla frosting, topped with a generous amount of coconut.

  • 3 eggs - separated
  • 1/2 cup butter
  • 2 cups sugar
  • 2 tsp. baking powder
  • 2-1/2 cups flour
  • 1 cup milk

Preparation -
Grease and flour 2 - 8" or 9" round layer cake pans. Beat the egg whites until stiff; set aside. In a bowl, mix the egg yolks, butter and sugar together. Beat at medium speed for about 2 minutes. In a separate bowl, mix the flour and baking powder together. Add to the other ingredients, alternately with the milk. Mix well, then beat hard for 2 more minutes. Fold in the beaten egg whites. Pour the batter into the prepared cake pans. Bake in a preheated oven at 350º for 30 to 35 minutes or until the cakes spring back when touched lightly in the center.
