Mini Cheesecakes

Mini Cheesecakes

  • 12 vanilla wafers
  • 2 - 8 oz. pkgs. cream cheese
  • 1/2 cup sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 can fruit pie filling

Preparation -
Line a muffin pan with foil liners. Place one vanilla wafer in the bottom of each liner. Mix together the cream cheese, sugar and vanilla until well blended. Add the eggs and beat well. Spoon the mixture into the foil cups, over the wafers, filling each one to about 3/4 full or less. Bake in a preheated oven at 325º for 20 to 25 minutes.

Remove from the pan, cool on a wire rack, then top each one with a spoonful of cherry, blueberry, or strawberry pie filling, pineapple jam or other fruit topping.
