Taco-Chili Casserole Recipe

Taco-Chili Casserole

Here's a hearty and delicious casserole to warm you up on a cold winter day. Taco seasoned chili is layered with tortilla chips and cheddar cheese.

  • 1 pound lean ground beef
  • 1 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 packet taco seasoning mix
  • 1 can (15 oz.) tomatoes
  • 1 can (8 oz.) tomato sauce
  • 1 can (15 oz) kidney beans
  • 1 bag (16 oz.) tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream - regular or low-fat (optional)

Preparation -
Saute the ground beef, chopped onion and chopped green pepper in a large skillet; drain off any fat. Stir in the taco seasoning mix , tomatoes, tomato sauce and kidney beans. Simmer, uncovered, for about 20 minutes, stirring occasionally. Spray a 2 to 3 qt. size casserole dish with non-stick cooking spray. Layer about half the tortilla chips in the bottom of the prepared casserole. Spoon half the ground beef/tomato mixture over the tortilla chips. Layer most of the remaining tortilla chips on top, reserving enough of the chips for a thin top layer. Add the remaining ground beef/tomato mixture. Scatter the shredded cheddar cheese over the ground beef. Top with the remaining tortilla chips. Bake in a preheated oven at 350° for 30 minutes. Top individual servings with sour cream(optional).
