Pumpkin Pancakes


Here's a special pancake recipe that's perfect for cool autumn mornings.

  • 1 cup baking mix (such as Bisquick®)
  • 1 T. light brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. allspice
  • 3/4 cup evaporated milk
  • 1/4 cup pumpkin puree
  • 1 T. vegetable oil
  • 1 egg
  • 1/2 tsp. vanilla

Preparation -
Combine the baking mix, brown sugar, and spices in a bowl and mix thoroughly. Add the remaining ingredients and stir. Lightly oil a griddle or a heavy skillet (This amount of oil is NOT included in above ingredients.) Heat the skillet, then pour on about 1/4 to 1/3 cup batter per pancake. Cook until the edges of the pancakes are slightly dry and the surface is bubbly. Turn the pancakes and cook until both sides are a light golden color. Serve with maple syrup or honey.
