Taffy Treats

Taffy Treats

  • 1/2 lb. plus 2 T. butter
  • 1/2 cup confectioners sugar
  • 3 cups flour
  • 2 egg yolks
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 1 bag (14oz.) caramel candies
  • 1/2 cup water
  • 1/2 cup chopped peanuts
  • Preparation -
    In a medium bowl, cream the butter and sugar together. Add the egg yolks, vanilla and salt. Mix well. Add the flour to make a heavy batter. Shape the mixture into balls and place on an ungreased cookie sheet, about one inch apart. Bake in a preheated oven at 375º for 12 to 15 minutes. Remove from the cookie sheet to a wire rack. Place a large, round toothpick in each cookie. Allow the cookies to cool.

    Unwrap the caramels. Place the caramels and 1/2 cup water in a small microwaveable bowl. Microwave on high power for 3 minutes or until the caramels are completely melted, stirring after each minute. Dip each cookie in the melted caramel, then roll in the chopped peanuts. Place on waxed paper or parchment paper for about one hour to set.
