Cherry,Banana, & Pecan Quick Bread

Cherry,Banana, Pecan Quick Bread



  • 1 jar maraschino cherries -10 oz.jar
  • 1/3 cup butter
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 3/4 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup mashed ripe bananas
  • 1/2 cup chopped pecans

Preparation -
Drain cherries, then coarsely chop the cherries, reserving 2 tablespoons of the cherry juice. In a large mixing bowl, combine butter, brown sugar, eggs and the 2 tablespoons of reserved cherry juice. Mix on medium speed with an electric mixer until ingredients are well mixed. Set batter aside. In a separate bowl combine flour, baking powder and salt. Alternately add the flour mixture and mashed bananas to the batter stirring by hand until well mixed. Stir in the chopped cherries and pecans. Spread batter evenly in 9" x 5" x 3" loaf pan that has been sprayed with a non-stick ccoking spray. Bake at 350º for 55 to 60 minutes, or until golden brown and and a toothpick inserted in the center comes out clean. Remove from pan and cool on a wire rack.
