Chocolate Mint Bars

Chocolate Mint Bars

    bottom layer
  • 1/2 cup shortening
  • 2/3 cup sugar
  • 1/4 cup cocoa
  • 1 egg
  • 1/2 tsp. mint extract or flavoring
  • 1-1/4 cups flour

    top layer

  • 1 cup finely chopped pecans
  • 1-1/2 cups flaked coconut
  • 3/4 cup mint chocolate chips
  • 1 can sweetened condensed milk
Preparation -
Spray a 13" x 9" cake pan with non-stick cooking spray; set aside. In a mixing bowl, combine the shortening, sugar, cocoa and egg and mint extract or flavoring. Beat at low speed until smooth. Add the flour and mix just until blended. Press the mixture into the bottom of the prepared cake pan. Bake in a preheated oven 350° for 10 minutes. Mix the chopped pecans, coconut,and chocolate chips together in a bowl. Add the sweetened condensed milk and gently stir to mix all the ingredients together. Pour this mixture over the baked layer. Return to the oven and bake for 20 to 25 minutes or until golden brown on top. Place on a wire rack to cool completely before cutting into bars.
