Healthy Thanksgiving Leftover Ideas and Recipes Turkey Breast Skinless, white meat turkey is a low fat source of protein so turn your leftover white meat into a fabulous turkey salad. Serve it on toasted multigrain bread with some lettuce and tomato and you are in for a treat! Ingredients • 1 cup turkey meat, chopped • ½ cup celery, chopped • ¼ cup dried cranberries • ¼ cup walnuts, chopped • 1 tsp fat-free sour cream or fat-free yogurt • 1 tsp reduced fat mayonnaise • 1 tsp Dijon mustard Directions Combine the turkey meat, celery, dried cranberries, and walnuts in a large mixing bowl. In a small mixing bowl, whisk together the remaining ingredients and combine with the turkey mixture. Toss to coat. Serves 4. Mashed potatoes I love to use leftover mashed potatoes (white or sweet) as a topping for Shepherd’s Pie. Lighten up your traditional recipe by using ground turkey meat instead of ground beef and vegetable or chicken stock instead of beef stock. Vegetable Side Dishes Leftover vegetables can be used in almost anything. Puree roasted vegetables with some chicken stock for an easy but tasty soup or throw some into a hot frying pan with egg whites for a nutritious egg white omelet. Crudités Keep all your crudités zip-locked in the fridge as the perfect on-hand snack. Toss a can of chick peas into a food processor with some roasted red peppers, garlic cloves, lemon juice, salt, pepper and a bit of olive oil and you have a healthy hummus to accompany them. Homemade Cranberry Sauce Fresh cranberries are low in calorie and high in vitamin C and they help ward off urinary tract infections. Use leftover cranberry sauce as dressing for a turkey breast sandwich with watercress on a whole wheat roll or as a healthy topping for low-fat vanilla yogurt and nuts or granola. Leftovers Another great and healthy idea I have for Thanksgiving leftovers is to GET RID OF THEM!! You can donate untouched leftovers to a local food bank or homeless shelter. Save yourself extra calories while giving to others in the true spirit of the holiday.
