Trick or Treat Caramel Corn

Trick or Treat Caramel Corn

  • 7 cups popcorn
  • 1 cup roasted, unsalted peanuts
  • 1 cup candy corn
  • 1/2 cup brown sugar
  • 1/2 cup honey
  • 6 T. butter
  • 1/4 tsp. baking soda
  • 1/4 tsp. vanilla

Preparation -
Spray a 9" x 13" pan with non-stick cooking spray. Place the popcorn and peanuts in the pan; set aside. Melt the butter in a 2 quart saucepan. Add brown sugar, honey, and salt. Bring to a boil, stirring constantly, then reduce heat and cook for 5minutes, stirring occasionally. Remove from heat, and stir in the baking soda and vanilla. Pour the mixture over the popcorn and peanuts and stir gently to coat. Bake at 275º for 10 minutes. Stir in the candy corn and place the pan back in the oven for 5 more minutes. Spread the mixture in a single layer on waxed paper or baking sheets sheets and allow to cool. Place in a bowl to serve or store in an airtight container.
