Oven-Fried Chicken Recipe
A crowd-pleasing dish with less calories and fat than regular fried chicken. Make for a picnic or just a quick and healthy dinner.

Ingredients
  • 2/3 cup buttermilk
  • 8 boneless skinless chicken breast halves (2 1/2 lb.)
  • 1 cup corn flakes cereal
  • 1 cup original Bisquick mix
  • 2 packages (1 ounce each) ranch dressing mix
  • cooking spray

    Directions
    1. Heat oven to 400 degrees Farhenheit. Spray a cookie sheet with cooking spray. In a shallow glass or mixing bowl, pour buttermilk and then add chicken, turning to coat. Let stand for approximately 5 minutes.

    2. Place corn flakes into 2-quart resealable plastic food storage bag and crush with a rolling pin. Add the Bisquick mix and dry dressing mix to corn flakes. Remove chicken from buttermilk and discard the buttermilk. Add the chicken to the cereal mix, seal the bag, and shake to coat.

    3. Place chicken on the cookie sheet and spray the chicken with cooking spray. Bake approximately 45 to 50 minutes or until juice from chicken is no longer pink when center of thickest pieces are cut.
