Cajun Baked Sweet Potatoes Recipe

So simple and delicious, you will wonder why you don't fix baked sweet potatoes more often.

Serves 6 (1/2 potato each)

3 sweet potatoes, about 1 pound each
Olive Oil
Sea salt
1/4 pound butter (1 stick)
Pepper (black, white, cayenne or a combination)

Preheat oven to 400° F.

Wash the sweet potatoes; dry thoroughly. Rub the skins with a little olive oil and then rub sea salt into the skins. Prick each potato several times with a fork to allow steam to escape during baking.

Bake the sweet potatoes for about 60 minutes, or until the flesh feels soft.

To serve, split sweet potatoes lengthwise, and make a large X in the center of each half to open up the potato. Add a slice of butter to each serving and sprinkle with sea salt and pepper to taste.
