Lunch 101

Lunch is a meal I tend to struggle with mainly because the options around me become stale and I easily get sick of the usual salad or sandwich. If you are in the same boat, check out these fabulous and diverse lunch ideas. If done right, it’s a great meal to use in order to achieve your daily recommended allowance of vegetables.

Grilled Cheese and Tomato Soup
One of the most comforting meals ever invented and with a few tricks, it can be healthy as well. Use reduced fat cheese, whole wheat bread and cooking spray instead of butter and you are all set. As for the tomato soup, feel free to make your own or take a little help from the store. A favorite of mine is Amy’s Organic Cream of Tomato. Although it has some milk, it’s still low in fat and sodium and it tastes great!

Tuna Salad Stuffed Tomato
Serve any one of my delicious tuna salad recipes (see related links) like this and it will turn an ordinary lunch into something extraordinary. Pick out a fabulous looking tomato and cut off the top and remove the center. Stuff it with tuna salad and serve on a bed of greens. Yum!

Boca Burgers
Make a healthy version of a burger using a Boca meatless patty served on a toasted whole wheat English muffin and top it with lettuce, sliced tomato, pickles, mustard and ketchup. You can serve it alongside some crudités or to complete the “burger” experience, serve it with my recipe for Savory and Sweet Potato “Fries”(also in related links).

Office

Here are some great salad combinations to order at your local lunch place. They can all be made with romaine lettuce, spinach leaves or mixed baby greens. In salads that have cheese or avocado I forgo dressing and just use balsamic vinegar. For all other salads I usually select a fat-free Italian, fat-free raspberry vinaigrette or fat-free balsamic vinaigrette.

Sliced avocado
Diced bell peppers
Corn kernels
Grape tomatoes

Salad 2
Portabella Mushrooms
Feta cheese
Chick peas
Corn kernals
Chopped carrots

Salad 3
Grilled Shrimp
Roasted red peppers
Chopped tomatoes
Sliced cucumber
Asparagus tips

Salad 4
Canned tuna
Chopped celery
Chopped carrots
Broccoli florets
Sliced apple
