Cheddar Cheese Meatloaf

Cheddar Cheese Meatloaf

Here's a recipe for a tasty, cheddary alternative to plain meatloaf.

  • 1-1/2 lbs. lean ground beef
  • 3/4 cup crushed cheese crackers (use Cheez-Its or a similar type cracker)
  • 1/2 cup milk
  • 2 eggs, lightly beaten
  • 1 cup (4 oz.) shredded cheddar cheese
  • 1 small onion, finely chopped
  • 1/4 cup green bell pepper, finely chopped
  • 1/4 cup chili sauce
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

    Preparation -
    In a large mixing bowl, mix the ground beef, milk, eggs, and cracker crumbs together. Add the remaining ingredients and mix everything together well. Spray a large loaf pan with non-stick cooking spray. Shape meat mixture into a loaf and place it in the prepared pan. Bake in a preheated oven at 350º for 1-1/2 hours or until the temperature in the center of the meatloaf reaches 160º.
