Honey Barbecued Broiler

Honey Barbecued Broiler

  • 1 (2-1/2 to 3 lb.) broiler-fryer chicken, quartered
  • 4 garlic cloves, minced
  • 1-1/2 tsp. dried, crushed marjoram
  • 1 tsp. dry mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 T. honey
  • 2 T. balsamic vinegar

Preparation -
Rinse the chicken quarters and remove the skin. Pat the chicken pieces dry with a paper towel. Mix together the garlic, marjoram, mustard, salt, and pepper. Rub the mixture into the chicken pieces. Combine the honey and vinegar. Lightly brush the mixture over the chicken pieces. Place the chicken on a plate, cover with plastic wrap and refrigerate for at least 2 hours before grilling. Prepare a charcoal or gas grill for use. The grilling surface should be about 8" above the coals. Spray the grill rack with nonstick cooking spray. Place the chicken pieces on the prepared grill, over indirect heat, and cook for about 40 minutes, turning occasionally. Grill over direct heat for an additional 5 minutes per side to lightly brown the chicken.
