Honey Glazed Carrots


Honey Glazed Carrots

  • 1 lb. fresh carrots
  • 1/2 cup orange juice
  • 1 tsp. cornstarch
  • 2 T. butter or margarine
  • 2 T. honey

Preparation -
Peel the carrots and cut into thin slices. Place the slices in a microwave safe bowl or casserole dish with about 1/3 cup water. Cover and microwave on high for about 10 to 12 minutes, or until tender, stopping to stir after about 6 minutes. Combine the orange juice and cornstarch in a glass measuring cup or other microwave safe container. Microwave on full power for about one minute, stirring halfway through. Add the butter and honey and microwave for one more minute or until the mixture is thickened. Drain any water from the carrots. Stir the orange/honey mixture into the drained carrots. Microwave on full power, uncovered, for 1-1/2 more minutes.
