Sweet and Spicy Barbecued Chicken
Sweet and Spicy Barbecued Chicken - 1 T. butter
- 1 garlic clove, minced
- 1/3 cup finely chopped onion
- 1 can (8 oz.) tomato sauce
- 1/4 cup chili sauce
- 1 T. Worcestershire sauce
- 2 T. honey
- 2 T. brown sugar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 (2-1/2 to 3 lb.) frying chicken, cut in pieces
Preparation - Melt the butter in a saucepan. Add the garlic and onion. Saute over medium heat until the onion is tender. Add the tomato sauce and chili sauce and mix well. Stir in the Worcestershire sauce, honey, brown sugar, salt and pepper. Simmer over low heat for about 5 minutes. Remove from heat and set aside. Prepare a charcoal or gas grill for use. The grilling surface should be about 8" above the coals. Spray the grill rack with non-stick cooking spray. Place the chicken pieces on the prepared grill, over indirect heat, and cook for about 35 minutes, turning occasionally. Baste the chicken pieces with the sauce and grill over direct heat for an additional 10 minutes per side, basting frequently with additional sauce.
