Ground Bison Recipes

Now that you are eating healthy, you probably think that hamburgers, meatball subs, and steak are out of your life for good, right? Not true! Bison meat has less fat and calories than skinless chicken breast (really!) and more iron and B12 than regular beef. Here is a versatile recipes for ground bison – the same recipes makes 4 delicious burgers, or 8 meatballs for spaghetti night. You can also grill up bison filets just like a steak

Low-fat Basic Ground Buffalo Recipe
Ingredients
  • 1 lb. ground ground bison meat
  • 1 tsp. garlic salt
  • 2 tbsp. Worcestershire sauce
  • 1/4 cup bread crumbs (can be omitted or decreased for the carb conscience)
  • 1 egg (or 2 egg whites)
  • 1/4 cup scallions, finely minced
  • 1 Tbsp lite soy sauce
  • 4 slices low-fat cheese

    Directions for Buffalo Burgers

    In a large bowl, combine the bison meat, garlic salt, Worcestershire sauce, bread crumbs, soy sauce, and scallions. Form 4 patties. Spray a large skillet with cooking spray and heat until hot. Add the patties to the hot pan and cook for 2-3 minutes. Flip over. Cover pan and simmering until patties are cooked through (approximately 165 on a meat thermometer). Remove lid and place one slice cheese on each patty and allowing it to melt. Place on oven steamed or toasted whole grain buns and serve with your favorite condiments, including ketchup, light mayo or light miracle whip, mustard, onions, and tomatoes.

    Directions for Buffalo Meatballs

    In a large bowl, combine the bison meat, garlic salt, Worcestershire sauce, bread crumbs, soy sauce, and ½ the scallions. Form 8 meatballs. Spray a large skillet with cooking spray and heat ¼ of the minced scallions until tender (about 4-5 minutes)until hot. Add the meatballs to the hot pan and cook for 2-3 minutes. Move the meatballs around to brown them all over. Cover pan and simmering until meatballs are cooked through (approximately 165 on a meat thermometer). Remove lid and serve with spaghetti or on your favorite whole wheat bread for a delicious sandwich.
