Triple Berry Pie Recipe

Triple Berry Pie

Use any combination of your favorite fresh berries in this quick and easy, no bake pie recipe.

  • 4 cups assorted fresh berries - blueberries, strawberries, red or black raspberries
  • 1 - 9" shortbread ready to use pie crust
  • 1 -1/2 cups orange juice
  • 3/4 cup sugar
  • 2 T. cornstarch
  • 1 box (4 serving size) strawberry or raspberry gelatin
  • whipped topping

Preparation -
If using strawberries, remove the hulls ands slice the berries. Rinse all the berries under cool water. Place the berry mixture in the shortbread ready crust. Mix the orange juice, sugar and cornstarch together in a saucepan. Bring to a boil over medium heat, stirring constantly. Boil for one minute then remove from heat. Add the gelatin powder and stir until completely dissolved. Cool the mixture to room temperature. Pour into the pie crust, over the berries. Refrigerate for at least 2 to 3 hours or until firm and set. To serve - top individual servings with whipped topping.
