Triple Berry Pie Recipe

Triple Berry Pie

Use any combination of your favorite fresh berries in this quick and easy, no bake pie recipe.

  • 4 cups assorted fresh berries - blueberries, strawberries, red or black raspberries
  • 1 - 9" shortbread ready to use pie crust or 1 - 9" baked pie shell
  • 1 -1/2 cups orange juice
  • 3/4 cup sugar
  • 2 T. cornstarch
  • 1 box (4 serving size) strawberry or raspberry gelatin
  • whipped cream or whipped topping
  • Preparation -
    Rinse the berries under cool water. If using strawberries, remove the hulls and slice large berries. Place the berry mixture in the ready crust or baked pie shell. Mix the orange juice, sugar and cornstarch together in a saucepan. Bring to a boil over medium heat, stirring constantly. Boil for one minute then remove from heat. Add the gelatin powder and stir until completely dissolved. Cool the mixture to room temperature. Pour into the pie crust, over the berries. Refrigerate for at least 2 to 3 hours or until firm and set. To serve - top individual servings with whipped cream or whipped topping.
