Creamy Apple Cole Slaw

This cole slaw variation is a great fall side dish that goes well with almost any meal.

  • 4 large, crisp, red delicious apples, unpeeled
  • 3 cups shredded green cabbage
  • 1 cup sour cream, regular or low-fat
  • 3 T. lemon juice
  • 1 T. sugar
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 T. poppy seeds (optional)

Preparation -
Core the apples and cut into very thin slices. Mix the thinly sliced apples and shredded cabbage together in a large bowl. Whisk the remaining ingredients together in a separate bowl. Stir this mixture into the apple/cabbage mixture. Cover, refrigerate, and chill for at least one hour before serving.
