Low-Fat Belgian Waffles

Low-Fat Belgian Waffles

  • 1/2 cup lukewarm water
  • 2 tsp.sugar
  • 1 packet active dry yeast yeast
  • 2-1/2 cups flour
  • 1/4 cup sugar
  • 2 cups skim or 1% milk - lukewarm
  • 2 T. canola oil
  • 1/4 cup applesauce
  • 1 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • dash of salt
  • 1/4 cup egg substitute
  • 2 egg whites

Preparation -
Place the first 3 ingredients in a bowl. Stir, then let stand for about 5 minutes or until until bubbly. Add all the other ingredients except the 2 egg whites. Whisk, or beat on low speed of an electric mixer until smooth. Cover and let rest in a warm place for about 1/2 hour. Beat the egg whites until stiff. Fold the beaten egg whites into the batter. Bake in a moderately hot waffle iron for about 4 minutes or until light golden brown. Makes 4 to 6 waffles, depending on size of waffle maker. Top with fresh fruit and Low-fat whipped topping.
