Beer Fox Tip of the Week:

To create your own smoked beer (aka Rauchbier) you can use a caludron-style charcoal grill with a shallow, screen-basket to smoke the malt. The malt rests in a screen-basket, which you can make from a wood frame with screening stapled to it. Build a small fire with a handful of charcoal briquettes off to the side (you do not want the malt directly over the coals), and wait until the briquettes have finished flaming and are white-hot. Soak wood chips in water, then spread them over the coals. Spread malt evenly into the screen-basket, and place the basket on the rack in the grill (but snuggled to the side), close the lid, and allow to smoke from 30 minutes to 2 hours.

Be selective in the wood chips you choose for smoking. Mesquite will give a delicate spiciness. Peat imparts phenolic, oily, creosote-like characteristics. Alder has a sweet, delicate woodiness, as does apple. Cherry adds almond fruitiness, and birch gives a subtle wintergreen profile to the malt. Grapevine wood is herbal, while white oak tends to add a pungent, musty backbone.

Beer Fox Laugh of the Week:

The scene is a newspaper office. The editor says to one of his reporters: There's a fire raging out of control west of town and I want you to get out there fast. And above all, get some good shots. If that means you have to hire an airplane, just do it. Don't worry about the expense.

So, the reporter calls the local FBO and orders a plane. He rushes out to the airport, spots a small aircraft with a young pilot in it, pulls open the door, jumps in and says to the pilot: Let's go, take off. As directed, the pilot takes off, gets up to altitude, and the reporter then tells him, "See that fire raging to the west? I want you to fly over that and get down as close as you can."

Incredulous, the pilot says, "You want me to fly over that fire?"

"Sure," the reporter says, "I am a photojournalist and that's why I am here--to take dramatic shots of the fire!"

The pilot looks over with a quizzical look on his face and says, "You're not the flight instructor?"

Beer News:

Beers of the World, an international consumer magazine, has announced the winners of the annual World Beer Awards. An international panel of judges tasted hundreds of beer from the UK, Europe, Australia, and the USA to name best in each style category. These winners were then submitted into a semi-final round, where a select committee of the UK's most renowned brewers assessed them in a blind-tasting round to select the best in each category. Those winners entered a final round in which four beers were selected as the "World's Best Beers."

...and the four Winners are:

World's Best Lager:
Primator Exkluziv 16% - Bock - Pivovar Náchod a.s, Náchod, Czech Republic

World's Best Ale:
Tripel Karmeliet 8% - Tripel - Brouwerij Bosteels, Buggenhout, Belgium

World's Best Stout/Porter:
Rogue Shakespeare Stout 6% - American Stout - Rogue Ales Brewery/ Brewers on the Bay, Newport. Oregon, USA

World's Best Wheat Beer:

Other American breweries winning Category Awards were: Deschutes Bachelor ESB, Sam Adams Holiday Porter, and Sam Adams White Ale. American breweries winning Highly Commended Category Honors were: Sam Adams Dark Black Lager, Deschutes Abyss, and Blue Moon Belgian White.

American beers winning Style Trophies were:
Goose Island IPA, Rogue I2PA, Sam Adams Oktoberfest, Sam Adams Cream Stout, Sam Adams Cherry Lambic, and Goose Island Bourbon Cream Stout.

All winners of the World's Best Awards were also winners in their style and category class.

For those who love Gluten Free Beer, SA Damm Ed Apta Para Celiacos was the Style Winner in the Gluten Free Beer category, crafted by SA Damm of Barcelona, Spain.

Great American Beer Festival - October 9-11, 2008 - Colorado Convention Center, Denver, Colorado, USA

Style: Pepper Porter, 5.4% ABV

Crafted of nine parts porter and one part pepper, this deep walnut "hot shot" is packed with assertive malt and the feel of a big beer. it has a delicious tongue feel, with a firm balance between malt and pepper. The malt profile is complex, drenched in roastiness, with subtle bittersweet chocolate, and a hint of smokiness. Heat plays well in the background with just enough attention to wow the taster and quench the thirst.
Really spectacular!
