Oatmeal Raisin Cookies

Oatmeal Raisin Cookies

  • 4 cups flour
  • 2 tsp. baking soda
  • 2 tsp. salt
  • 1 T. cinnamon
  • 4 cups rolled oats
  • 2 cups vegetable shortening, such as Crisco®
  • 1 cup brown sugar
  • 1 cup sugar
  • 4 large eggs
  • 2/3 cup milk
  • 2 tsp.vanilla
  • 2 cups raisins
  • 1 cup chopped pecans or walnuts

Preparation -
Mix the flour, baking soda, salt, cinnamon, and oats together in a bowl; set aside. Cream the shortening, sugar and brown sugar together. Add the eggs. Beat for 2 to 3 minutes at medium speed. Add the milk, vanilla, and the dry ingredient mixture. Mix well. Stir in the raisins and nuts. Drop by rounded teaspoons full onto ungreased cookie sheets. Bake in a preheated oven at 375º for 10 to 12 minutes.
