Asian Beef & Noodles

Asian Beef & Noodles

  • 1-1/4 pounds lean ground beef
  • 2 packages (3 oz. each) Oriental Flavor Instant Ramen Noodles
  • 2 cups water
  • 2 cups frozen vegetable mixture
  • 1/4 tsp. ground ginger
  • 2 T. thinly sliced green onion

Preparation -
In a large skillet, brown the ground beef over medium heat for 10 to 12 minutes or until the beef is no longer pink, breaking it up into fine pieces.  Pour off the drippings and season the browned ground beef with one seasoning packet from the Ramen noodles. Remove the ground beef from the skillet and set it aside. In the same skillet, mix the water, frozen vegetables, noodles (broken up), ginger and the remaining seasoning packet.  Bring to a boil, then reduce heat.  Cover and simmer for about 3 minutes or until the noodles are tender, stirring occasionally.  Return the beef to skillet. Stir in the green onion and cook for about another minute or until all the ingredients are heated through.  Makes 4 servings.
