Cajun Roasted Potato Recipe

When roasted potatoes are this flavorful, they add just the right finishing touch to roasted or grilled meats and poultry. This very simple recipe is one of my favorites. The active preparation time is less than 15 minutes.

Russet Potatoes, washed, peeled, and sliced as for thick steak fries
Olive Oil
Cajun or Creole Seasoning or Cajun Rub (see links below)

Preheat oven to 350°F.

Lightly coat a baking pan with olive oil. Add the prepared potatoes in a single layer, rolling the potatoes around in the oil to coat. Sprinkle the oiled potatoes with Cajun seasoning or homemade Cajun rub seasoning blend (see links below) to taste.

Place the baking pan on the middle rack of the oven and roast for about 30 minutes or until the potatoes are brown and crispy on the outside and tender fork tender on the inside. You can lightly drizzle the cooked potatoes with a very small amount of olive oil, if you wish. Additional seasoning may be added to taste.

Serve hot. This dish holds well in a 200°F oven for about 15 – 20 minutes.


Cook’s Notes:
When using a salt free seasoning blend, such as Bayou Seasoning Blend, salt potatoes to taste before roasting.

Do not add too much oil. Less is better!
For easy cleanup, line the bottom of the baking pan with foil.

By varying the seasoning, this side dish becomes Mexican, Italian, or Southwest style potatoes. For a tangy, garden fresh variation, substitute lemon olive oil, lemon sea salt, and 3-lemon pepper.

Red potatoes can be substituted for russets.


Menu Suggestions
Cajun Beef Tri Tip, Cajun Roasted Potatoes, Fresh Green Beans with Almonds and Blue Cheese, and a tossed green salad.

Perfect Roast Chicken, Cajun Roasted Potatoes, Field Greens with Pomegranate Vinaigrette and Fresh Steamed Broccoli with sautéed red bell pepper strips, minced garlic and a sprinkle of parmesan cheese.

Leftovers are delicious for breakfast when heated and served with eggs. Simply sauté some chopped onion, bell pepper, and garlic in a small amount of olive oil. Add the leftover potatoes and cook until hot. Adjust the seasonings, as necessary and serve.
