Blueberries N' Cheese Coffee Cake Recipe

Just because you're trying to eat healthy doesn't mean you have to sacrifice taste and give up your favorite foods. Take this delicious coffee cake for example - only 240 calories and 8 grams of fat per serving. Eating healthy shouldn't mean sacrifice - just trying your favorite foods in a different way.

Ingredients
  • 2 tbsp. butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 2 egg whites
  • 1/4 cup unsweetened applesauce
  • 2 tbsp. canola oil
  • 1 tsp. grated lemon peel
  • 2 1/4 cups all-purpose flour, divided
  • 1 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 cup 1% buttermilk
  • 2 cups fresh or frozen blueberries
  • 1 package (8 ounce) reduced fat cream cheese, diced

    Topping
  • 1/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tsp. grated lemon peel
  • 2 tbsp. cold butter

    Directions
    1. In a large mixing bowl, beat butter and sugar until light and crumbly; beat in egg, egg whites, applesauce, oil, and lemon peel. In a separate bowl, combine 2 cups flour, baking powder, salt, and baking soda. Add to the sugar mixture alternating with buttermilk. In another bowl, toss blueberries with remaining flour. Fold into batter along with cream cheese. Coat a 13-in. x 9-in. x 2-in. baking dish with nonstick cooking spray. Pour mixture into pan.

    2. Topping: in a bowl, combine flour, sugar, and lemon peel. Cut in butter until mixture is crumbly. Sprinkle over batter in pan.

    3. Bake at 375 degrees Fahrenheit for 30-35 minutes or until toothpick comes out clean. Cool completely on a wire rack.

    Yield: 15 servings.

    Note: If you are using frozen blueberries, do not thaw before using in this recipe.
