  • 1/4 cup unsweetened applesauce
  • 2 tbsp. canola oil
  • 1 tsp. grated lemon peel
  • 2 1/4 cups all-purpose flour, divided
  • 1 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 cup 1% buttermilk
  • 2 cups fresh or frozen blueberries
  • 1 package (8 ounce) reduced fat cream cheese, diced

  • 1/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tsp. grated lemon peel
  • 2 tbsp. cold butter

    1. In a large mixing bowl, beat butter and sugar until light and crumbly; beat in egg, egg whites, applesauce, oil, and lemon peel. 2. Topping: in a bowl, combine flour, sugar, and lemon peel. Cut in butter until mixture is crumbly. Sprinkle over batter in pan.

    3. Bake at 375 degrees Fahrenheit for 30-35 minutes or until toothpick comes out clean. Cool completely on a wire rack.

    Yield: 15 servings.

Note: If you are using frozen blueberries, do not thaw before using in this recipe.
