Holidays are a wonderful time to enjoy great tasting food with family and friends. However, cooking for big crowds can be time consuming and leave you little time to spend with those you love. Want a great recipe for Christmas breakfast that is fast, easy, and delicious?

Breakfast casseroles are a great way to make delicious meals ahead of time, so that you can spend more time with family and less time in the kitchen. This is a healthy breakfast option for Christmas morning that your entire family will love and may even become a family favorite. It can be made with or without sausage for those who choose to go meatless. The recipe can be altered to suit your tastes. Does spinach send your tastebuds into a tailspin? Use mushrooms or peppers (green, yellow or red), instead. The point is to add variety and use vegetables that you enjoy eating.

Healthy Breakfast Casserole
8 servings

Ingredients:
1 pound of ground turkey or chicken sausage (use TVP for vegan option)
1 chopped onion
2 cloves chopped garlic
1 bag fresh spinach
1 package salsa seasoning or 1 cup of drained salsa
1 cup sour cream
8 large eggs
1 cup shredded cheddar cheese

Salt and pepper, to taste
Fresh cilantro

Directions:
Brown sausage, onion, and garlic in a large skillet. Add in spinach until wilted. In a bowl, combine salsa mix (or drained salsa) and sour cream. Add to sausage mixture and heat through. Crack eggs on top. Cover pan and cook on low heat for approximately 8 minutes. Sprinkle shredded cheese over the mixture and replace the lid. Cook for an additional 4 minutes. Season with salt and pepper and sprinkle with cilantro for a fancy plated look (fresh cilantro also tastes great).

Alternate Directions
Preheat oven to 375 degrees
Brown sausage, onion, and garlic in a large skillet. Add in spinach until wilted. Add cooked mixture to greased baking pan. In a bowl, whisk together eggs, salt and pepper. Pour over sausage mixture. Cook in the oven approximately 20-25 minutes (times may vary depending on oven and altitude). Remove from oven and let mixture set 5 minutes.

In a bowl, combine salsa mix (or drained salsa) and sour cream. Spread over cooked egg mixture and add shredded cheese. Return pan to oven until cheese is bubbly. Sprinkle with cilantro and enjoy!
