Holidays are a wonderful time to enjoy great tasting food with family and friends. However, cooking for big crowds can be time consuming and leave you little time to spend with those you love. Want a great recipe for Christmas breakfast that is fast, easy, and delicious? Breakfast casseroles are a great way to make delicious meals ahead of time, so that you can spend more time with family and less time in the kitchen. This is a healthy breakfast option for Christmas morning that your entire family will love and may even become a family favorite. It can be made with or without sausage for those who choose to go meatless. This casserole is great served with fruit to make a complete meal. Try the holiday fruit salad below for an easy, quick and festive side dish.
Healthy Holiday Breakfast Casserole
8 to 12 servings
8 ounce package of turkey or chicken sausage
3-4 medium sweet potatoes
1 8oz package of mozzarella cheese
1/2 small chopped onion
1 cup of fresh chopped spinach
1 16 oz container of cottage cheese
8 large eggs
Preheat your oven to 375
Brown turkey sausage in a large nonstick skillet then drain on a paper towel and pour in bowl. Wash and scrub sweet potato and cut in small square size cubes. Brown sweet potatoes and cook until tender. Pour cooked turkey sausage and sweet potatoes in a large casserole dish and set aside. Chop onion and spinach then place in a large mixing bowl. Add eggs and cottage cheese and stir. Pour mixture on top of sausage and sweet potatoes. Put a layer of shredded mozzarella cheese on top of casserole. Bake in oven until toothpick inserted in center comes out clean. Approximately 45 minutes to one hour. This can be made the night before and stored in the refrigerator and cooked the next morning for a quick breakfast or brunch.
Holiday Fruit Salad
4 to 6 servings
3 organic bananas
1 cup of organic green grapes
1 cup of organic red grapes
1 cup of organic plain yogurt
½ cup of chopped walnuts
Slice two bananas and place in a medium serving bowl. Toss in green and red grapes. Serve fruit in individual bowls and top with plain yogurt and chopped walnuts.
For a quick and easy holiday table, serve the holiday casserole on festive red or green plates. Put your fruit salad in white bowls and add holiday napkins to complete your table decor. This will give your breakfast a special, festive appeal. Brew a special flavored coffee and pour in holiday mugs.
