Gai Phrik Khao Phat [Chicken Chile Fried Rice] I first learned to make Thai Fried rice about 20 years ago in a Thai Cooking class given by long time friend and award winning author, Kasma Loha-unchit. Gai Phrik Khao Phat [Chicken Chile Fried Rice] 4 cups Brown Rice*, cold left over from refrigerator *This can be Jasmine Brown or other Brown Rice 3-4 ounces of boneless chicken breast cut into bite sized pieces (or left over grilled chicken) 1 link of low fat chicken sausage** cut into 1/3" slices and browned 2 teaspoons vegetable or peanut oil 2 Tablespoons chopped garlic handful of 1 inch pieces red and yellow bell peppers handful of �� pieces red onion 3 Tablespoons of Thai Oyster Sauce (I prefer, Maekrua Brand ) 3 to 5 Thai chiles (phrik chee fa) diced (wear rubber gloves when chopping and touching) a few splashes of Fish Sauce Nam pla (Golden Boy is excellent) 1-2 eggs beaten and fried in a separate pan, sprinkle w/white pepper, slice and add at the end Generous sprinkling of white pepper 2 handfuls of Thai Basil lleaves (bai horapha) *Optional - Smoked dry chilies ground up for garnish and extra heat Garnish: Basil leaf sprig Heat a well seasoned pan (wok is best) Add the oil and heat until hot, add the raw chicken stir fry, (if using left over grilld chicken cut it into stips and sit aside) Brown sliced sausage Add the onions and bell peppers, fry Add the garlic and chopped chilies when chicken is still pink Add the Oyster Sauce, Add the rice (make sure all big chunks are broken up) Stir fry Add the egg pieces Add the fish sauce Taste and adjust oyster sauce and or fish sauce if needed Add Thai Basil leaves, and stir fry until leaves are wilted Garnish with Basil leaves and sliced cucumber if desired Allow about 1 1/2 cups of rice per person for a main course. This is so easy and tasty. I like the smokiness of ground roasted chiles in this dish, and sometimes I add this as I stir fry. Roasted Thai chiles can be found in most Thai makets. I sometimes make my own Thai Sausage, but have found using a sausage like Chicken Sausage (sun dried tomato) by Han's All Natural, to be a great and easy way to zap up the flavour of fried rice. This sausage is msg free, hormone and nitite and nitrates free. Each link only contains 6 grams of fat and it is BIG on flavour! I recently tried making this badic Thai Fried Rice using left over brown rice and is it not only healthy but awesome in the taste and texture department. C.
