This drink is a prerequisite for becoming an official Canadian; even the underagers are familiar with the virgin version. A perfect drink for the cottage, at brunch, or as a midnight snack.

There are very few things on this earth that taste better than the combination of raspberry and chocolate. And when you make this martini, it will be love at first sip.
There are as many different versions of this recipe as there are positions in the Kama Sutra, but this one is my favourite. It features black raspberry and melon liqueurs, juices, and vodka.
This frozen Bellini mocktail is quick, easy, and still just as tasty made without alcohol, and with frozen fruit ices, sherbets, or sorbets.
Usually created with pureed peaches, this Bellini is much quicker and still as tasty made with frozen fruit ices.



Michelle's Swizzle-Stick Tip
Most everyone knows about freezing juice to make ice that won't dilute your punch as it melts, but did you know that you can make flavoured ice cubes to add a subtle taste to your favourite beverage? Try freezing lemon juice and water for your iced tea to add a tasty zing to each sip. Or add crushed herbs, such as mint, to the water trays for a pretty... and tasty... drink addition.




Cutting Back On Booze?
You can eliminate most, if not all, of the alcohol in the cocktail recipes I feature and write about. Notes On A Cocktail Napkin...
It's been a few weeks since the last newsletter, and in that time I've sent in my cocktail book manuscript, completed several of the illustrations for it, signed on to write a new column for another publication, and moved to a new house! "I made the non-alcoholic version of the pineapple punch (served it individually) and it was a big hit. I'm planning to make this again but want to make it with the brandy and champagne. What kind of champagne or sparkling wine should I use? A sweeter version or drier version? Also, about how much will this make? Thanks." -- K. Rowan

My reply: This recipe was contributed by a previous editor, but I would guess that it serves 8-12 people, depending on your glass size. As for the kind of champagne to serve it with, try one that is dry and matches the kind of ginger ale you used before (since what you made was such a success!). If you wanted to, you could add a sweet sparkling wine with some club soda, if that's what you have. It's all depending on what your own tastes dictate.
