Orange-Almond Green Beans Recipe

Guest Author - Jennifer Murray

Green beans are a great source of vitamins and nutrients and do not have to be bland. One cup of cooked green beans has only 30 calories, no fat, sodium or cholesterol, 2 grams of protein, and 63 grams of calcium. Green beans are also a great source of fiber, Vitamins A and C, and iron. The almonds in this recipe add a dose of healthy fat.

Ingredients
  • 1 lb. green beans, trimmed
  • 1/8 cup slivered almonds
  • 2 tsp. orange-infused olive oil or other citrust-infused oil

    Directions
    1. In a medium pot, bring 2 cups of water to a boil.

    2. Using a steamer, cook the beans until tender, approximately 10 to 15 minutes. While steaming the beans, toast the almonds in a nonstick saute pan over medium-low heat. Stir the almonds frequently until golden brown (approximately 4 minutes).

    3. In a serving bowl, toss beans and almonds with oil. Add salt and pepper (optional).
