Newsletter RecipeGrilled Summer Veggies - Keep the heat out of your kitchen. Grill this tasty summer vegetable mixture alongside your main course. This recipe makes about 6 servings. - 2 small zucchini - sliced (do not peel)
- 1 small yellow summer squash, sliced (do not peel)
- 1 large red or yellow bell pepper - seeds removed and cut into 1" pieces
- 1 medium red onion - coarsely chopped
- 1 T. olive oil
- 1/4 tsp. pepper
- 1/2 tsp. oregano
- 1 large, firm tomato - remove seeds and chop coarsely
- 1/2 tsp. salt
- 1 T. grated Parmesan cheese
Preparation - Place the zucchini slices, yellow summer squash slices, chopped bell pepper, and chopped red onion in a resealable plastic bag. Close the bag shake to mix the vegetables. Add the olive oil, salt, pepper and oregano and shake to evenly coat the vegetables. Preheat a gas grill to medium. Transfer the vegetable mixture to a grill basket. (Or.. spray a large piece of heavy duty aluminum foil with non-stick cooking spray and place the vegetable mixture on the prepared foil.) Grill for about 15 minutes, watching closely, until barely tender. Add the chopped tomato and grill for about 5 more minutes. Sprinkle with salt and grated Parmesan cheese just before serving.
